These are a great little child-friendly snack, without any artificial preservatives or additives. Be mindful that they are calorie dense.
- 10 dates ( remember to remove the stones )
- 5 organic dried apricots
- 3 tablespoons unsweetened cocoa powder
- 1 big tablespoon of coconut oil
- some desiccated coconut for rolling.
Simply blend everything together in a small food processor.
Roll the date mixture into small balls. Putting some coconut oil on your hands before you start can help make this easier and less sticky.
Roll the balls in desiccated coconut and put them in the fridge. They are best served cold.
